The Thymiopoulos family has been in agriculture and growing Xinomavro grapes in the village of Trilofos for several generations, but Apostolos Thymiopoulos was the first to vinify the family vineyards while studying oenology. The winery is organic and biodynamic, and the wines are fresh and clean, living fruit, wild-yeasted, unfiltered, and using a minimum of sulphur. All wines are made from grapes harvested from un-grafted vines, growing in soil with layers of chalk and volcanic rocks.

Apostolos Thymiopoulos has mastered the taming of the Xinomavro’s Nebbiolo-like structure better than anyone and managed to make the grape palatable without the use of casks. He is a pioneer in the all-important red wine appellation of Naoussa – Greece’s version of Barolo-country  - and he encourages all wine producers in the region to implement organic and biodynamic growing methods in the vineyards and natural vinification methods in the cellars. In 2005, he produced his first wine named “Earth and sky”, and he truly believes in sustainable viticulture and minimum intervention during the whole winemaking process.

Apostolos applies this philosophy to produce ten different expressions of xinomavro, the renowned variety of Northern Greece, trying to reveal every aspect of its potential. He has become the ambassador for Greece’s new wines and winemakers, taking Greece beyond the southern Mediterranean and establishing it on international markets. Thymiopoulos has propelled the hitherto relatively obscure region of Naoussa and its formerly unloved grape variety to success in global markets; it’s an exceptional achievement. He has expanded his winery and populated it with concrete eggs and amphorae, as well as his preferred larger-size oak and has expanded into the production of Rosés.

Thymiopoulos winery is located in Trilofos, a village on the foothills of Vermio mountain in Naoussa, Macedonia, northern Greece. A place in perfect harmony with nature, offering wines that reflect their origin.

The wines from Thymiopoulos Vineyards have been a favourite among danish restaurants and wine bars, since their first arrival in 2015, and have been enjoyed at Gaarden & Gaden, Anarki, Brace, Spisehuset & Terroiristen Vinbar- og Butik and Vår, as well as Geranium.
