The Malagousia-grapes for this wine are hand-picked in four vineyards at an altitude of 600-850 metres. The vines are old bush vines which are not irrigated and grow in limestone-rich soil, which results in a very low yield of exceptional quality grapes with a significant level of acidity.
The wine is spontaneously fermented og only the free-run most is used in the winemaking, after basket-pressing.
The wine has a very nice light yellow colour and distinct notes of lime and basil on the palate, with a hint of grass, minerality and salt. It has a nice volume in the mouth, with crisp acidity and long aftertaste.
Pair it with chicken, fish, shellfish and summer greens - it is especially good with artichoke and both green and white asparagus.
This is the natural version of Tetramythos Malagousia - more elegant and refined than the conventional version.
The current 2021 vintage is the best we have tasted in the last ten years.
