Organically produced white wine from the Tatsis brothers on the Greek red Xinomavro grape.
The only natural 100% Xinomavro Blanc de Noirs from Goumenissa, Macedonia. During the vinification, the skins are removed from the juice right after pressing. The juice is then spontaneously fermented using only wild yeasts and spends time on steel tanks before bottling without filtration.
The wine has notes of earth and nuts on the nose, with hints of quince, honey, fresh herbs, tomato and apple. It is characterized by its refreshingly high acidity and a taste-explosion of fresh yellow and red fruits, with elegant vibrant tannins and a very long-lasting and playful aftertaste.
Drink this wine by itself or pair it with dishes of fish, chicken, pork or grilled root vegetables - As with all Xinomavro wines, it goes well with dishes with tomato, capers, olives and lemon.
During the summer of 2020, the wine saw great success on menus in pairings with asparagus and in 2021 it found its way to restaurants focusing on the best of Nordic cuisine, including Domestic in Aarhus, Vinøst on Bornholm and Mastro in Hellerup.
In April 2022, the wine received praise from the food and wine reviewer Søren Frank, when he had it at Restaurant Levi.
