Tatsis white on the Macedonian Roditis grape is a fuller-bodied wine with subtle floral aromas leading to a dry, mineral-driven palate. Wild and bold, with all the elements of natural wine-making present. Pairs excellently with fresh oysters and lump-fish roe.

Mikael Stjerne Nygaard, a wine business colleague, wrote this amazing shout-out for the wine, translated from Danish (March 2021):

"Colour: platinum with flecks of green. Roditis - Alepou 2018... Tasted this fantastic white wine on the Roditis grape from fields at an altitude of 800 meters. It's natural wine, which means no fertilizer, using only the grapes' own yeast cells, minimal intervention in the cellar, zero filtering, only gravitation - like when decanting a vintage Port before serving, where the residuals are left in the bottle. Unlike at the purist, Sclavos, this wine has a small amount of added sulphite when bottling. The colour is platinum with flecks of green. Impossible to grasp, that this wine comes from sunny Greece. We are at the same altitude as Thessaloniki, but further from the ocean, in a mountainous ski-resort area. The cool nights give freshness and minerality. The sunny days nourish the wine's generosity and charm. Again, I had the surprising experience of a white that keeps expanding over several days and probably peaked on the 2nd. Had I tasted Tatsis Roditis blind, I would have guessed it was the grand white of Loire, Chareau de Fesles. Natural wine, but not sure anyone notices, except for the quality. The concentration and intensity is nothing less than alluring. Wonderful for fish dishes, as well as white meat."
