The brothers Tatsis made this wine in honour and memory of Haridimos Hatzidakis, as they did not have time to make it together before the sorrowful passing of Haridamos.
The grapes are grown at an altitude of 300-400 meters and on sloping, clay and sandy loam soils on vines that have an average age of 15 years. The vines are subject to snowy winters and hot summers and are only irrigated by natural rainfall.
As with all of the wines from Tatsis Winery, the vinification is done with the native yeasts present on the grapes and with the least possible human intervention. Commercial yeasts have never entered the premises of the winery. The grapes are destemmed and subject to classic red vinification, with 25 days on the lees, even though the wine is made with 50% green Assyrtiko grapes. The wine is then aged for 12 months on oak casks, followed by two months on steel tanks. It is then bottled with no stabilizers and aged in the bottle for a further 12 months.
The combination of Negoska and Assyrtiko is a unique and original combination that, in addition to emotions, gives us a wine with richness and finesse.
