Iliana Malihin’s Liatiko PGI Rethymno is a light, crisp, refreshing red, with floral and herb notes and beautifully balanced acidity. Perfect for pairing with food like light fish dishes or pasta, or drinking by itself in the sun, for a little taste of Crete. A complex and spicy wine that is challenging and full of character.
Iliana Malihin established her winery in 2019, by sourcing local grapes from farmers committed to her exacting cultivation standards. All the wines are created under Iliana’s expert supervision, using philosophies of organic and biodynamic cultivation and minimum intervention.
The Liatiko grapes are hand-picked from vineyards in the region of Meronas. The vineyards consist of a mix of ungrafted bush vines between 40-50 years old, that go unirrigated. The grapes are pressed after removing 90% of the stems and vinified using long extraction with fermentation on wild yeast at 22°C. 50% matured on old, 3rd use-barrels 50% on steel tanks for 8 months. During maturation, Cretan music is played for the wine - a vital step in the vinification process. It is bottled without fining and with very low sulphite use.
