This wine comes to us from the people of Hatzidakis Winery, who work with an organic and biodynamic philosophy in their vineyards and with minimal intervention in their cellars. Made with the Assyrtiko varietal from 5 parcels at Pyrgos, Megalochori, Akrotiri and Vourvoulos on Santorini.
The vines are between 40 and 80 years old and grow in volcanic and pumice stone, at an altitude of 30 to 220 metres. They have been turned in the traditional koulouri way, a shape that resembles a pretzel. They receive constant sun, minimal rain and powerful winds.
After hand-picking, the grapes are fermented with indigenous yeasts at 17-18°C and matured for 5 months in stainless steel tanks, before being bottled without filtering.
The wine is characterized by a nice yellow colour with golden hues, delicate notes of citrus, white flowers and minerality on the nose. Aromatic and intense minerality on the palate, with a long aftertaste that has a prominent freshness and a powerful acidity - typical of wines from the vineyards of Santorini.
Santorini Familia is a versatile wine that pairs well with shellfish, fatty fish like salmon or mackerel, yellow cheese, chicken, pork, and even tomato and asparagus. This wine has ageing potential of at least 5 years, potentially up to 10 years.
Santorini Familia 2018 is the first vintage of the new Assyrtiko-based wine from Hatzidakis - taking over from Santorini, which will no longer be produced.
We were allocated an extra batch of this wine in the spring of 2021, so you can meet this special wine with a bit of age. Vintage 2020 could exclusively be enjoyed as part of the wine menu at Restaurant Alchemist in 2021.
This wine is usually sold out quickly, as was the case with the 2018 and 2020 vintages - but we still have a small amount left of the 2021 vintage for anyone interested in this masterpiece white.
