This wine comes to us from the people of Hatzidakis Winery, who work with an organic and biodynamic philosophy in their vineyards and with minimal intervention in their cellars. Made with the Mandilaria varietal from 4 parcels at Pyrgos, Megalohori, Akrotiri and Emporio on Santorini.

The vines grow in volcanic soil and have been turned in the traditional koulouri way, a shape that resembles a pretzel or basket. They receive constant sun, minimal rain and powerful winds.

After hand-picking, the grapes are sent for pressing and the must transferred to the fermentation tank where it was fermented naturally under controlled temperatures, 16-18°C, for a month and then matured on tanks for 6 months before being bottled unfiltered.

This exceptional rosé has a bright magenta colour and aromas of summer red fruits and hints of red flowers. It has an elegant texture with a buttery and salty aftertaste and strong hints of minerality.

Serve with summer dishes with light red sauces, Mediterranean cuisine and or light meats like chicken or fresh salads.

Suitable for ageing up to 2 years.
