A stunning one-of-a-kind revolutionary blanc de noirs with unique expressiveness and extraordinary bubbles. Blanc de Noirs Méthode Champenoise on the Greek Assyrtiko and Xinomavro grapes - as opposed to Domaine Karanika's other wines, which are primarily made with pure Xinomavro. Made in the Amyntaio-appellation in Macedonia, Northern Greece. The vines grow in the old sandy, dried-out seabed in a temperate continental climate.
Applying the traditional method of Champagne, this is the perfect marriage of the lovely and elegant white Assyrtiko and the extraordinarily structured xinomavro. The wine remained on its lees for at least 48 months acquiring a highly complex and unique character that can easily compare positively to several of the big Champagnes.
Grapes of different grades of ripeness are pressed using a basket press. The Assyrtiko grapes are wild fermented in barriques and the Xinomavro is subjected to temperature-controlled fermentation from 16-22C. Very little sulphur is used and there are no chemical additives. The 2nd fermentation takes place in the bottle for 48-90 months. This sparkling sensation is released 6 months after degorgement.
It has an attractive white-gold colour, with persistent bubbles - white blossom and yeast zooming like bees in a field of flowers, lemon curd and fine pastry find their way to the nose. Expect big flavours, a mix of fresh mint, anise, yellow apple and perfectly balanced acidity and bitterness that playfully stay in the mouth for a very long time.
