This wine is Domaine Karanika's flagship. A stunning one-of-a-kind revolutionary blanc de noirs with unique expressiveness and extraordinary bubbles. Blanc de Noirs Méthode Champenoise on the Greek Xinomavro grape, from the Amyntaio-appellation in Macedonia, Northern Greece. The vines grow in the old sandy, dried-out seabed in a temperate continental climate.
Whole grape bunches, exclusively from ungrafted, 60-year-old vines, are pressed in a basket press and fermented in both inox and 20 hl foudres at temperatures of 18 -22 degrees Celsius. No chemical additives and no sulphur use. 2nd fermentation is done in the bottle for 54-84 months. Released 6 months after degorgement with Zero dosage.
The colour is yellow-gold, illuminated like the setting sun reflecting on the seawater.
Full-frontal and charmingly fresh citrus fruits and apple, salt-marinated lemon peel and hay. Creamy yet fresh and crisp acid. It is quite dry, showing off the naturally high acidity of the Xinomavro grape in a beautiful balance. Has a long and complex aftertaste.
Open this on all the same occasions, and with the same food, as you would a French Champagne.
